Recipe: Mediterranean Focaccia
Mediterranean Style Focaccia
Store bought focaccia always had a special place in my heart so I decided to give it a try myself! The recipe I found was more simple than I imagined and resulted in a tasty bread with little rising time. The perfect side dish to any meal.
Ingredients:
- Dough:
- 5 tbsp olive oil
- 1 1/2 cups warm water
- 3 1/2 cups all-purpose flour
- 1 tbsp instant yeast
- 1 1/4 tsp salt
- Garnish:
- 1 tbsp Italian seasoning
- 1 1/2 cups cherry tomatoes
- 3 strands of rosemary
- 1 tsp black pepper
Instructions:
- Preheat your oven to 375 degrees Fahrenheit.
- Use 2 tbsp of olive oil to grease your baking pan.
- In a large food processor with the dough blade attached, add in all your dough ingredients (olive oil, water, flour, yeast and salt)
- Blend until the desired dough consistency is reached and all the ingredients have come together.
- Set the dough aside in your prepared baking sheet and allow it to rise for at least one hour. Cover with plastic wrap to avoid drying out the dough.
- Once risen, shape the dough to fit the pan's rectangular shape.
- Lightly brush on some olive oil.
- Poke small holes in your bread and evenly distribute your spices and herbs on top. Finally, add on your cherry tomatoes along with any other desired Mediterranean vegetables ( ex: red onions or black olives).
- Bake for 25 to 30 min.
- Serve and enjoy!
