Recipe: Shrimp Scampi
Shrimp Scampi
Cooking with seafood has been a challenge out of my comfort zone for some time now. The cultural cuisine I grew up eating had no tie to seafood but I am curious to explore this ground further in my cooking. Truly a visually stunning dish too!
Ingredients
- 1 lemon (for zest and juice)
- Black pepper to taste
- 1 tbsp salt
- Olive oil (use as needed)
- 1 tbsp butter
- 1 pound shrimp
- Linguine or spaghetti noodles
- 4/5 cloves garlic
- A handful of cilantro and parsley
Instructions:
- In a medium bowl season the shrimp with olive oil, salt and pepper.
- Prepare a medium pan with olive oil and butter. Add garlic and peppercorns to release the flavours prior to adding the shrimp.
- Cook the shrimp for 2 min on each side. You can tell they're fully cooked if they curl up and adapt a golden-pink colour on both sides.
- Finely chop and add the cilantro and parsley
- Fill half a pot of water and bring it a rolling boil. Season with a bit of salt and add your noodles. Cook until Al Dente.
- Drain the pasta and reserve half a cup of water for the sauce.
- Add the pasta to the shrimp sauce and coat evenly.
- Top with chopped herbs and garnish with slices of lemon.
- Enjoy!
