Recipe: Lemon Poppy Seed Muffins
Lemon Poppy Seed Muffins
As recommended by my friend Katherine :)
Ingredients:
- 3 C all-purpose flour
- 1 C sugar
- 2 tbsp poppy seeds
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 C plain whole milk yogurt or low-fat yogurt
- 2 tbsp fresh lemon juice, optional
- 1 1/2 tbsp grated lemon zest
- 2 large eggs
- 8 tbsp unsalted butter, melted and cooled
Instructions:
- Preheat the oven to 375 degrees Fahrenheit.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt and poppy seeds.
- In a separate bowl, mix together yogurt, lemon zest, lemon juice, eggs and melted butter
- Gradually mix the wet mixture with the dry mixture. DO NOT overmix.
- In a prepared muffin pan, evenly scoop out and distribute your batter.
- Bake in the oven for 20 or more minutes. Use a toothpick to check if the middle is fully cooked.
