Recipe: Lemon Poppy Seed Muffins

 

Lemon Poppy Seed Muffins 

As recommended by my friend Katherine :)



    Ingredients:

  • 3 C all-purpose flour
  • 1 C sugar
  • 2 tbsp poppy seeds
  • 1 tbsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 1/2 C plain whole milk yogurt or low-fat yogurt
  • 2 tbsp fresh lemon juice, optional
  • 1 1/2 tbsp grated lemon zest
  • 2 large eggs
  • 8 tbsp unsalted butter, melted and cooled

    Instructions:

  1. Preheat the oven to 375 degrees Fahrenheit. 
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt and poppy seeds. 
  3. In a separate bowl, mix together yogurt, lemon zest, lemon juice, eggs and melted butter
  4. Gradually mix the wet mixture with the dry mixture. DO NOT overmix.
  5. In a prepared muffin pan, evenly scoop out and distribute your batter. 
  6. Bake in the oven for 20 or more minutes. Use a toothpick to check if the middle is fully cooked.
