Banana Chocolate Chip Muffins
This recipe is the perfect time-efficient and delicious healthy snack you can incorporate into your everyday diet. It can be quickly whipped up in a blender but the taste and texture resemble those of professionally baked products you get at your local bakery.
Ingredients:
- 6 cups almond flour
- 3 ripe bananas
- 3 large eggs
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp cinnamon
- 1/4 cup chocolate chips
- 1/4 thinly sliced almonds
- 1 tsp vanilla extract
Instructions:
- Preheat the oven to 400 degrees Fahrenheit.
- In a food processor or blender mash your ripe bananas with your eggs and vanilla extract. Then add your cinnamon, baking powder and soda. Gradually incorporate your flour until you reach the desired consistency.
- Take out the blade and stir in your chocolate chips.
- In a prepared muffin pan lined with muffin paper evenly distribute your batter. Flatten it and top them with chopped almonds.
- Bake for 25-30 mins or until golden brown.
- Leave them to cool for 10 minutes. Refrigerate or serve hot and enjoy!!!!
