Tofu Breakfast Scramble

 

Tofu Scramble

This Tofu Scramble is the perfect alternate to a breakfast omelette. It's packed with protein, fiber and nutrients to jumpstart your morning. It carries the same texture of scrambled eggs but tastes even better! 



    Ingredients:

  • Spices:

    • 1/4 tsp turmeric 
    • 1/4 tsp ground black pepper 
    • 1/4 tsp oregano 

  • 1 small yellow onion 
  • 1 zucchini 
  • 1 bell pepper
  • 1 1/2 cup spinach
  • 1/2 pack of firm tofu 
  • 1/4 tsp sesame oil 
  • 1 tsp olive oil 
  • 2 tbsp soy sauce 
  • Sesame seeds (for garnish) 

    Instructions:

  1. Wrap the tofu in a cloth or paper town and carefully squeeze out the remaining juices. 
  2. Slice your onions and bell peppers into thin bits and your zucchini into quarters. 
  3. Coat your medium heat pan with olive oil. Stir fry your onions, zucchinis and bell peppers. 
  4. Add your turmeric, pepper and oregano along with your sesame oil for some extra flavour. 
  5. Using your hands, crumble your tofu in the pan and stir to cook evenly. 
  6. Turn the heat down and add your soy sauce and spinach. Close the lid to thoroughly cook the spinach. 
  7. Plate your scramble and top with sesame seeds.
