Recipe: Adobe Chicken
Adobo Chicken
I discovered the wonders of Philipino cuisine through my experience with a food truck at a local festival. Their menu inspired me to recreate this dish!
Ingredient
- 4 to 5 pounds chicken thighs
- 1/2 cup white vinegar
- 1/2 cup soy sauce
- 4 cloves garlic, crushed
- 1 teaspoon black peppercorns
- 3 bay leaves
- Steamed rice
Instructions:
- Prepare rice in advance.
- In a large pot, cook the chicken thighs with onions. Next add the soy sauce, white vinegar, crushed garlic, peppercorns and bay leaves. Leave for 2 hours.
- After the chicken is thoroughly cooked, remove the bay leaves, and serve on a platter with some of the sauce on the side.
- Place adobo alongside rice and enjoy!
