Recipe: Adobe Chicken

  

Adobo Chicken 

I discovered the wonders of Philipino cuisine through my experience with a food truck at a local festival. Their menu inspired me to recreate this dish!





    Ingredient

  • 4 to 5 pounds chicken thighs

  • 1/2 cup white vinegar

  • 1/2 cup soy sauce

  • 4 cloves garlic, crushed

  • 1 teaspoon black peppercorns

  • 3 bay leaves

  • Steamed rice

    Instructions:

  1. Prepare rice in advance.
  2. In a large pot, cook the chicken thighs with onions. Next add the soy sauce, white vinegar, crushed garlic, peppercorns and bay leaves. Leave for 2 hours.
  3. After the chicken is thoroughly cooked, remove the bay leaves, and serve on a platter with some of the sauce on the side.
  4. Place adobo alongside rice and enjoy!
